Maple Pecan Banana Ice Cream

Ingredients:


  • 4-5 over ripe bananas peeled, sliced and frozen
  • 1/2 cup pecans, toasted
  • 2 tablespoons vegan margarine, softened
  • 2 tablespoons brown sugar
  • 1/4 cup maple syrup + extra to taste
  • sugar to taste (optional)
  • splash of non dairy milk, if needed

Directions:

Begin by toasting the pecans. Spread on a baking sheet and bake and 350 degrees farenheit for five minutes, or until browned. Be sure to keep an eye on them as they burn quickly.

In a small bowl, blend brown sugar and margarine and set aside.

Put the bananas in a food processor and blend until smooth. This is where you might need that splash on nondairy milk.

Add pecans, sugar/margarine blend, and maple syrup. Pulse until blended

Transfer to an air tight container or enjoy as soft serve.
